This is a new offering from Bibiana & Jeff Pisoni. Shared Notes has always been a joint-venture in winemaking: crafting small lots of high-end wine (and “sharing notes”). The desire is to share the same passion for coffee as they have for wine.

Both Bibiana and Jeff have spent their entire lives focusing on the sensory details of smell and taste while making wine—now they also look to do the same with single-farm sourcing & roasting of coffee.

Tasting notes:
Strawberry, brown sugar and lime (think aguapanela con limón) with a floral aftertaste and a bright green apple acidity. Creamy medium body.

  • Estimations:
  • 2 cups per day.
  • 1/2oz per cup = 1oz per day
  • 1 coffee drinker = 7oz per week. 1 12oz bag every two weeks
  • 2 coffee drinkers = 14oz per week. 1 12oz bag every week

Process

This washed process pink bourbon actually goes through two stages of fermentation. First the cherries are fermented for 24 hours anaerobic in a sealed GrainPro bag. Then cherries are allowed to ferment in an aerobic environment for an additional 24 hours in open tanks. After the double fermentation the coffee is depulped and washed then sun-dried for approximately 14 days.
